A good escargot experience seems to come down to the sauce. I enjoyed it in Paris when I had it b/c it had an awesome sauce but I’ve talked to other people who had it mostly plain and didn’t enjoy it all. Maybe it’s too easy to realize you’re eating a snail w/o the sauce :)
