I have been eating out steady for over 21 years, the shrimp that Pomodoro uses is probably the key. Different shrimp offers different taste and most importantly, texture, just like oyster. For well cooked shrimp, Pomodoro has it, not dry, not rubbery, not fishy, and surprisingly easy and present on the chewing. Now, the other end of the spectrum would be something totally raw for sushi or slightly cooked, and I would prefer live Spot Shrimp in such case as it has a sweet taste, and cooking of it is like cooking a steak, from well done to medium to rare to even raw, although the shrimp head must be cooked well done.
