Returning to Aureole Restaurant at the Mandalay Bay Resort & Casino, my husband and I decided we would just take in the scene in the restaurant’s intimate suede-walled lounge beside the towering conversation-piece wine tower. We failed miserably in not being spotted by a few of the staff we know there, and were instantly treated to appetizers and cocktails compliments of the management department.
Tantalizing flavors of such delights as the Seafood Sausage, Tune Poke, the Oyster of the Day, a cube of Lemon Watermelon, and Smoked Salmon Mousse embraced a multitude of exotic and unparalleled sapidity. I certainly remembered the Tuna Poke from our former visit to the restaurant when we dined in the intimate Swan Court (see the dinner review at: http://savorhour.com/?p=9748). I reminisced upon the larger version of this divine combination of sea salt-marinated cubed yellowfin tuna sashimi with its appropriate summation of piquant enhancements. The lemon-marinated watermelon cube was an intriguing eye-catcher, while its essence of sweet and acerbic tastes combined graciously. The Oyster of the Day was chilled to perfection and topped with a sprinkling of savory caviar, while the Seafood Sausage ranked high on our list of flavorful delights. We finished with the Smoked Salmon Mousse… its airy cloud of flavorsome happiness set upon a house made crostini. The crunch of the crisp bread beneath the mousse contrasted nicely against the smooth and creamy texture of the tasty topping.
Before we knew it, and another round of drinks magically appearing before us, we found ourselves arriving at a dining table in the restaurant on the other side of the lounge. Suddenly, those we were acquainted with at this eatery took charge, and insisted we stay for dinner. A table was set especially for the two of us, and two more vessels of beverages were delivered to us before we even ordered, compliments of the house.
The Organic Green Salad was prepared with ample creamy goat cheese packaged in a prepared phyllo dough casing. One bite of this magnificent salad creation, and I was smiling from ear to ear. A mild cider vinaigrette was added as a dressing choice, and sliced poached pears finished the dish off nicely with a sweet delicate conclusion.
The side of Garlic Mashed Potatoes that arrived was served in a rounded elongated dish and topped with olive oil marinated roasted garlic cloves. My husband and I took one bite and agreed that these were the best mashed potatoes (and certainly the most sinful) that we ever had the pleasure of consuming. The garlic essence throughout was spot on, while the texture was more like a thick hot creamy icing that would top most anything imaginable successfully. In a word, they were superb. I remember my husband and I fighting over the very last bite it was so addictive.
The Grilled Lemon Fish entrée was ordered by my husband. The sizeable filet of tender fish was placed atop a mountain of eggplant caponata, raisins, a chorizo cornbread cake, and puttanesca sauce. The visual appeal of this preparation was vibrant and colorful, while the flavor of the mild fish compared to the bold taste of its accompaniments produced a satisfying entrée from start to finish.
My Diver Scallops selection arrived with a beautiful display of large diver scallops, pickled turnips, sea beans, whole oversized cashews, and a cashew soy butter dripping from every component of this offering. Three gorgeous smooth-textured scallops were placed center stage amongst the accompanying components, while the aroma of the butter joined by the other ingredients was pleasantly overwhelming.
Aureole is known for their signature sweet finales to any meal enjoyed at the establishment. This complimentary refreshing Trio of Sorbets is placed into a custom-made serving vessel, which is almost as intriguing as the flavors and vibrant hues of the sorbets. Wild Strawberry, Southern Peach, and South Asian Mango flavors graced the shiny triangular shaped serving dish beneath the six large orbs of icy flavorsome goodness.
We enjoyed our most recent visit to Aureole. What was intended as a visit to the luxurious lounge beneath the 42-foot tower turned into an entire dinner indulgence. We’re happy it did. Ad we’re thrilled that Aureole will be there awaiting our next visit.
ESTABLISHMENT / DECOR: The upscale modern motif throughout the establishment is appealing to the eye without being too cutting edge to enjoy. Luxurious settings allow for intimate conversations, relaxed enjoyment of meals, and a four-story 42-foot glass-encased wine tower that immediately draws your attention as you first enter the restaurant.
FOOD / DRINK: Outstanding quality and sensational flavors will leave you yearning for more. Fresh ingredients permit palatable flavors to shine through, while refreshing beverages and an astounding wine list will intrigue the mind and cater to the connoisseur of all things divine.

HOURS: Aureole is available daily for dinner from 5:30 PM to 10:30 PM. The wine lounge is available daily from 5:30 PM until midnight, while Happy Hour is an exciting be-seen event from 5:30 PM until 7 PM in the lounge.
SERVICE / STAFF: You’ll find nothing but the best in service at Aureole. Many of the staff have been in the business for their entire lives, and wouldn’t think of doing anything else. Poised demeanors, professional attitudes, accommodating mindsets toward guests, and conversational with an awareness of the guest’s needs.
PRICE / VALUE: Exquisite details are found in every item ordered, while both the visual presentations and sensational flavors of the cuisine command respect. Prices match the quality and presentation of the culinary craft at Aureole.
CORKAGE FEE: Unfortunately, outside alcohol is not permitted inside of the restaurant. However, take a look at the wine and cocktail list when you arrive as there is a plethora of options to suit most any desire for delicious libations.

PARKING: Complimentary valet parking is available at the entrance to Mandalay Bay Resort & Casino. Our vehicle was being kept by our hotel’s valet department, so we simply walked from our hotel to the restaurant through the direct-access allowance from our property’s first floor.
PRICING: The 2005 French Chateau Coutet Burgundy my husband enjoyed was priced at $19 per glass, while my Riviera cocktails were a reasonable $16. The side of Garlic Mashed Potatoes came in at a simple $8, and the Organic Greens Salas was an acceptable $16. My husband’s Grilled Lemon Fish was priced at $34, as was the divine Diver Sea Scallops presentation I consumed. The Trio of Sorbets and the Appetizer Sampler Presentation were complimentary gestures on the establishment’s behalf.
