Although it is only one street away from Banff’s main strip, I had never even seen the The Bison Mountain Bistro before yesterday. Tucked away on the second floor of a rustically decorated building, the bistro has a very sunny and comfortable feel. Regional fare (ie, Rocky Mountain Cusine) is served in new ways using classic favorite recipes. For starters, we tried the Bison Onion Soup (a little too sweet for me), Mussels in Red Curry broth (nice and spicy to warm you up after a brisk horseback ride). The wood-oven fired bison pizza with asparagus bits was average – the mozzarella cheese sort of overpowered the delicate flavours of the thinly sliced bison and fresh asparagus spears. The Beef Tenderloin wrap was excellent though. Tender, juicy beef slices in a very nicely grilled, crispy wrap. So…the food was hit and miss, but the atmosphere was quite cozy.
