Herons is truly one of the city's best kept culinary secrets. Executive Chef Shannon Wrightson with his dedicated team features only the best of the Pacific Northwest, sourcing regional and local ingredients. So local and fresh in fact, that Chef handpicks herbs from his hotel roof top garden! Our signature items include authentically local Steamed Saltspring Island Honey Mussels, Seared Scallop & Wild Sea Tiger Prawns and Roasted Rack of Lamb.
