What distinguishes Gilbert's from other fine dining experiences is the way tradition & modernism artfully blend. The food, wine & home coalesce with simple, wonderful grace. Though the real foundation of Chef Hnilo's dishes enjoy their American & Pacific- Rim heritages. Chef Hnilo considers every detail of each dish to fit within the context of the lake geology, history, traditions & viticulture.

It's odd that this restaurant in this little town in Wisc...

It’s odd that this restaurant in this little town in Wisconsin is me and my wife’s favorite restaurant of all time. We’re from California and we’ve eaten at a lot of different places in and out of CA. But this is our favorite – freshest seafood, great presentation, awesome house [converted Victorian for their dining room], real-home-grown vegetables and herbs… it’s worth a trip if you’re flying into Chicago or Milwaukee.
