Living in Seattle, I’m a bit spoiled because I can head to Beecher’s store in Pike Place or get their cheese from any number of local shops in the area.
That said, I was on a food blog the other day when I heard someone raving about Beecher’s mac & cheese. I have heard this previously but since I love to cook and have a favorite mac & cheese recipe (several actually, one featuring extra sharp white cheddar from Upstate NY), I didn’t really think much of it. Just for the heck of it, I headed for Pike Place (January’s a great time to go…not too many tourists, hee hee) and gave their 8 oz size a try. HOLY CRAP…it’s almost as good as homemade! I couldn’t believe the lovely balance of tart and creamy…every bite was simply melt-in-your-mouth amazing and I was very sad when I finished the entire thing sitting there in Beecher’s storefront. Other mac & cheese has been ruined for me now.
