I love going to Collins, whether it be for a quick drink ...
I love going to Collins, whether it be for a quick drink (which there is no such thing at Collins) or a bite to eat.
It’s the perfect city bar meets the neighborhood bar. I’ve been going there since it opened, and to me the best part about this place is that the owner is there, on hands, meeting people, and making sure all is right.
The crowd is so diverse that it’s worth a mention. Being in the Smith Tower makes it the after work bar for many of those employed in the Tower. It also caters to people on their way to the art walk on the first Thursday of the month. Either way it’s a happening bar during happy hour, without the obnoxiousness of a meat market. and completely on the flip side it caters to brewers and beer aficionados with its brew master’s events and tastings.
The food is great, the ambiance is comfortable, the art on the walls isn’t always dead on (that would be the one critique), and the decor is very attractive.
Dishes I tried:
The Collins Burger
I’m not a huge burger fan, but that’s just because most burgers are bad, this however is super good. The are 12 different spices in the burger, the meat is fresh, and never dry and chewy.
Four Cheese Risotto
This is always one of my favorites, I have them throw in some rock shrimp and it’s perfect with a little black pepper on top.

07/25/2007I looked at the website, most of the beers on tap I have never heard of… what would you recommend? (I’m looking for something smooth – (John Smiths, Tetley’s)
