Good Easter meal cooked by moi: pork tenderloin that was first rubbed with ginger powder and then wet rub of maple syrup, grainy Meaux mustard and oil, then roasted. Tender crisp cabbage, green onion and sweet peppers. Franconia potatoes (parboiled first, then roasted), ditto carrots and parsnips. No wine – Kedem peach juice.

I had a phenomenal meal tonight. I cooked it for myself and one friend. I made stuffed flank steak. The stuffing was made with gluten free bread crumbs that I save from my crumbly loaves of home- made bread. Vegs: mashed potatoes, sauteed brussell sprouts, and lightly steamed spinach. I wish I’d had another different coloured vegetable – squash, perhaps. Anyway, it was a good meal and not all my meals are company fare.
