Great Trinidadian food - Indian meets Caribbean
You know the thing that has been missing for your life? The hole that you try to fill with drugs, or sex, or God? It’s actually a roti-shaped hole, and you’ll find what you’re looking for at Pam’s Kitchen. Pam Jacobs’ sublime version of this Indian-Trinidadan street food is a soft, napkin-sized flatbread filled with potato-chickpea curry and curried meat (get beef or lamb). Dribble on a few drops of habanero-vinegar sauce, and curry meets curry, spice layers upon spice, in a rapturous explosion of flavor. It’s good enough to live for. – Seattle Weekly
