Bruxie Gourmet Waffle Sandwiches now open in Chino Hills, CA
On November 14, 2012, Bruxie opened their 4th location in Chino Hills, CA. It all started back in 1999, when Dean Simon traveled in Belgium for business. He became fascinated with the local farmers markets and street vendors, particularly, homemade waffles prepared to order. In 2006, Brux Waffles was born after development of a waffle recipe reminiscent of this Brussels street food. Brux Waffles could be found in hotels around America and even on cruise ships. In 2009, Chef Kelly Mullarney was hired and ideas of making waffles an “all-day offering” combining sweet and savory combinations became the mission. The waffles were made thinner and folded for portability. Bruxie was born! It began Orange and opened three locations in Brea, Rancho Santa Margarita and now, Chino Hills. The location chosen at The Shoppes at Chino Hills is optimal. Facing the main street from the freeway, it’s hard to miss. At night, the Bruxie signage glows and catches your curiosity right away. The restaurant space is very open and colorful. Menu boards are hung high above so you can read them whether you are up close or back a bit in line. The Bruxie team is very friendly, attentive, and very excited to be a part of the Grand Opening.
Dishes Tried:
Roasted Mushroom & Goat Cheese
Roasted Mushroom & Goat Cheese is Laura Chenel’s Chevre Goat Cheese, fresh basil, arugula, and balsamic reduction. This savory number could be great for breakfast (think of these items inside an omelet). The goat cheese was smooth, creamy and matched perfectly with the fresh basil. The roasted mushrooms played well with the ingredients. The arugula gave it a refreshing crisp green flavor. If you like sun-dried tomatoes, they can be added on for $1 more. Thumbs up!
Buttermilk Fried Chicken & Waffle
Buttermilk Fried Chicken & Waffle with chili honey and cider slaw. The combination of chicken and waffles is a fantastic thing indeed. Bruxie’s version was spot on plus a little twist with the chili honey, slightly spicy and sweet, and a crisp, slightly sour punch from the cider slaw. Add 100% Pure Vermont Maple Syrup for a $1 to make it complete. Thumbs up, way up!
Bruxie Burger
Bruxie Burger is an Angus beef patty with cheddar cheese, sliced tomatoes, pickles, mayo, and crisp lettuce. Sounds a bit weird, but it is oh-so good. The patty was hand-formed and cooked to a perfect medium rare. The beef was so juicy and flavorful, I just couldn’t believe it. It made me happy as I found myself dancing in my seat. The cheddar was melted and gooey. The waffle soaked up the flavors so you don’t miss a drop. This is one of my favorite savory items on the menu. Thumbs up, way up!
Prosciutto & Gruyere
Prosciutto & Gruyere is Prosciutto di Parma and gruyere cheese with whole grain mustard and chives. I just came back from Milan a little over a month ago and this waffle took me right back. There is nothing better than thinly sliced Prosciutto di Parma. I had it for breakfast every morning in Milan. The mix of smoky, salty, and just the right amount of fat that makes this perfect with cheese, fruit, bread, or just on its own with a glass of vino. Bruxie’s waffle lets the prosciutto shine in all its glory. The Gruyere added a little bit of creaminess. Grazie! Thumbs up, way up!
Smoked Salmon Lox & Dill Cream Cheese
Smoked Salmon Lox & Dill Cream Cheese is Michel Cordon Bleu Cold Smoked Salmon with herb cream cheese, cucumbers, and chives. A classic dish conveniently served on a waffle. The smoked salmon was fabulous – smoked just right, not too salty, yet kept its buttery texture like sashimi. The cucumbers added a crisp, refreshing flavor. Simple yet brilliantly executed! Thumbs up, way up!
Hot Pastrami Bruxie is Boar’s Head Pastrami
Hot Pastrami Bruxie is Boar’s Head Pastrami with gruyere, cider slaw, spicy brown mustard and half sour pickles. Boar’s Head meats are sliced fresh daily on-site. It’s pretty good, but not the best pastrami ‘sandwich” I’ve ever had. It was a little too salty to my taste and not as juicy as I would have liked it.
Turkey Club
Turkey Club is Boar’s Head Roasted Turkey, gruyere, avocado, applewood smoked bacon, sliced tomatoes, crisp lettuce, and pesto aioli. Now, this is a turkey club sandwich. All of the flavors that you love in a turkey club but the waffle-flavor just punched it up a notch. The yeasty, malty flavor works really well with the turkey, avocado and bacon. Thumbs up, way up!
Chocolate Peanut Butter Premium Shake
Chocolate Peanut Butter Premium Shake is fantastic! If you are a fan of the chocolate and peanut butter combination, like me, you are going to love this! It’s creamy and chocolaty on the front end and peanut buttery on the back end. They have other premium flavors to choose from as well like Mocha, Chocolate Covered Banana, and Mint Chocolate. Thumbs up, way up!
Nutella & Bananas
Nutella & Bananas with sweet cream is scrumptious! You’ll often find this combination with crepes but it works really well on waffles too! Nutella, with its chocolate hazelnut flavor, worked really well with the bananas (imagine a chocolate covered banana). The waffle was the convenient vehicle to get these to flavors to your taste buds. Thumbs up, way up!
Lemon Cream & Berries
Lemon Cream & Berries is intense lemon cream with seasonal berries. This one was a tad too lemony for my taste. The sourness of the lemon cream was overbearing making the berries taste sour as well.
Chocolate Filled Liege
Chocolate Filled Liege, a Belgium Original, is filled with dark Belgian chocolate. It’s the Belgian equivalent to a chocolate filled croissant. It is crispy on the outside and packed full of dark chocolate goodness on the inside. Perfect for breakfast or dessert served with a hot cup of coffee. Thumbs up, way up!
S’Mores
S’Mores is Belgian chocolate, graham cracker & toasted marshmallow. This was good, but it needs a little more graham cracker inside or make the waffle batter graham cracker flavored. The chocolate and marshmallow were fantastic together, but the graham cracker flavor was lost. My taste buds missed it very much.
Seasonal Crème Brulee
Seasonal Crème Brulee is classic vanilla crème with burnt raw sugar and seasonal fresh fruit. This is my favorite sweet waffle! I love crème brulee and to make it fit for a waffle was an amazing feat! As you bite into the waffle, you’ll taste the creamy, custardy flavor of the crème brulee. The second bite will be crème brulee with a crunchy texture of the caramelized sugar crust that you know and love about crème brulee. The third bite is the crème brulee, the caramelized sugar, and soft, juicy berries popping. You’ll definitely have an OMG moment or two! Thumbs up, way up!
