Famous Dave’s serves slow-smoked award-winning BBQ ribs

Located in The Village at Orange, Famous Dave’s sits right on corner of Tustin Street and East Village Way. Once you park your car, let your nose lead you to the restaurant. You will easily be able to smell the smoky, porky goodness exuding from the restaurant. Nothing smells better than BBQ. Opening almost a year ago on November 15, 2010, I was so happy that we finally had a Famous Dave’s in Orange County. The only other closest locations that I had been to were in Las Vegas.

Dave Anderson, founder of Famous Dave’s, always had a passion for ribs and barbeque. His passion started when he was growing up in Chicago where his dad would bring home the best tasting slow-smoked ribs and not from a restaurant. This is how good recipes are born. We do this in small town Hawaii too. You’ll drive down the street and folks are selling local foods made right from their kitchen. It’s a wonderful way to spread your love of food to the masses. Dave set out on a 25-year journey around the country, tasting and learning how to make smoked meats from barbeque joints to mesquite pits. In May 1994, Dave opened his first location in Hayward, Wisconsin and rest is history.

The décor is designed to simulate a shack in the backcountry of the Deep South right down to the corrugated aluminum siding used for overhangs. Rough-cut cedar and actual barn wood gives the restaurants an authentic roadside BBQ feel. Hand-picked antiques decorate the walls and make you feel right at home. The background music matches perfectly with the décor and creates a toe-tapping ambiance while you eat.

Your server will give you a sauce tour before your food arrives so you can taste the different flavors and select among them to your preference. Choose from Rich & Sassy (sweet and tangy with hand-picked herbs and spices), Georgia Mustard (vinegar, brown sugar and mustard-based sauce), Texas Pit (tangy tomato-based sauce with a black pepper kick), Sweet & Zesty (Authentic “right out of the pit” flavor that balances citric sweetness with spirited spice), and Devil’s Spit (Rich and Sassy kicked up a few fiery notches). Have fun with it! Use one or combine them for your own unique flavor.

All-American BBQ Feast

Can’t decide? The All-American BBQ Feast for Two is a half slab of St. Louis-Style Spareribs, a half Country-Roasted Chicken, quarter pound of either Texas Beef Brisket or Georgia Chopped Pork (in this case Georgia Chopped Pork), Creamy Coleslaw, Famous Fries, Wilbur Beans, two corn-on-the-cobs and two corn bread muffins. If you’re a first timer and are overwhelmed with the choices, this is a great place to start.

Country-Roasted Chicken

Country-Roasted Chicken is lemon-pepper marinated half-chicken, roasted and char-grilled to perfection. It’s great to know that there are folks out there that make roasted chicken that tastes homemade. The chicken is thoroughly marinated and perfectly cooked, succulent, and juicy, even the breast! The skin is crispy and so flavorful. Savor every moment! It reminds me of the roast chicken from Kenny Rogers’ Roasters restaurants (from the 1990s). Chicken doesn’t get any better than this. Dave’s Cheesy Mac & Cheese is made with a blend of four cheeses with corn added and a jalapeno kick. We normally do not like mac and cheese, but this was fabulous! The cheese blend they use is super cheesy. The corn adds a sweet and textural change from the pasta. The jalapeno adds a great subtle spicy component to round it out. Thumbs up, way up!

Georgia Chopped Pork is smoked for up to 8 hours and chopped to order and slathered with the Rich and Sassy BBQ sauce. The pork is tender and juicy. If you’re lucky, you’ll get a crispy piece of pork fat mixed in with it. Pork fat rules! Thumbs up, way up!

St. Louis-Style Spareribs - Full Slab

The Big Slab is 12-bones, hand-rubbed with Dave’s secret blend of tongue-tingling spices and pit-smoked for 3-4 hours over a smoldering hickory fire. Then slathered with sauce over an open flame to seal in the Famous flavor and give them a crispy, caramelized coating and served with corn bread muffin, corn-on-the-cob and your choice of two sides. The ribs are smoked to perfection. You can clearly see the pink smoke ring in the meat. The meat is tender, juicy, and fall-off-the-bone good. The rub is a little heavy on the salt, but the flavor combination is outstanding! The Wilbur Beans Baked beans are loaded with chunks of smoked pork, brisket, hot link sausage and jalapeño peppers. These are the best baked beans I’ve ever had. They should really call it Meat and beans, because it’s packed with lots of their smoked meats. It’s not too sweet, but smoky from the meats, and a little spicy from the jalapeno – an excellent balance of flavors. The Creamy Coleslaw is a zesty slaw that’s pineapple sweet with a hint of horseradish. Wow! This is one of the best coleslaws I’ve ever had as well. Creamy and sweet, the way coleslaw should be with a kicker of horseradish! The corn-on-the cob is plump and cooked just right to keep it sweet. A little butter and you’re good to go. The corn bread muffin is sweet yet decadent. It could be your dessert! Thumbs up!

Texas Beef Brisket Sandwich

Texas Beef Brisket Sandwich is piled high with hand-seasoned, hickory-smoked Texas Beef Brisket. The brisket is tender and juicy. It has a great smoky flavor with the tell-tale smoke ring to match. The bark is evenly caramelized and tasty. It’s the best brisket I’ve ever had. The kettle chips are amazing! They are dusted with Famous Dave’s rub so it is almost like BBQ potato chips, but better. The chips are thick and have a great crunch. The spicy Hell-Fire Pickles are da bomb! I normally don’t like pickles but I loved these! They are sweet like bread and butter pickles and then have this spicy kick that hits you in the back of your mouth. Excellent execution on this dish! Thumbs up, way up!

Southside Ribtips Platter

Southside Ribtips Platter is a full pound of tips, hickory-smoked and fire-grilled with a Memphis style dry rub. The Southside BBQ sauce is the Rich and Sassy kicked up a notch with some Cajun spices and hot sauce. With ribtips, the meat is marbled with more luscious pork fat and as you get to the thinner parts, you get more bark (prized part for the barbeque lover). The meat is juicy. It just needs a little more picking to get all of the meat off of the bone and cartilage but it’s totally worth the effort! The rub is a little on the salty side, but if you dip it in the Southside BBQ sauce, the flavor become balanced and addictive. Get ‘em while you can ‘cuz y’all don’t wanna miss ‘em! Thumbs up!
