Servers Pay Debit and Credit Fees
This restaurant is a dinosaur in a city that cherishes its dinosaurs. Heavily-sauced beef dishes, menus that use dirty, yellowed plastic page holders, a salad bar… Makes you wonder when the "Surf ‘n’ Turf promo will start! Hail the 1970s and vegetarians beware.
I pondered how this kind of establishment could turn a profit in today’s health-conscious society, and several weeks after my visit, I quite coincidentally stumbled across this little nugget of information: apparently, this establishment, together with its sister restaurants (Sawmill) require the servers to chip in enough cash each day to cover the credit card and debit merchant fees. I hear that the staff refer to it as “Tom’s tax.”
It may only add up to a few dollars, but since when do the employees of a company pay these kinds of administration costs? Perhaps the owner should divvie up the business taxes and subtract those from paycheques, too.
This is the kind of thinking that has restaurant staff paying for guest “walkouts” as well. Not kosher, and not within the Alberta Labour Standards.
